The Collection field is only available for adding new products to store. Stock Sync does NOT sync the Collection field for existing products.
However, we suggest this method that could help you:
1. Add tags to products. For example, shoes.
2. Go to Shopify admin -> Products -> Collection
3. Change the Collection type to Automated and add Conditions as follows.
4. Add the Tags field in the Field Mapping.
5. Start updating the products.
